Quality knives should be kept sharp and in good condition for a long life, ease of use and safety. We recommend that they are sharpened periodically on a whetstone before they become dull to preserve the original edge.
The optimal blade angle for most cutting tasks is between 10 and 20 deg. Using these guides will help you achieve this sharpening angle on a whetstone and so get the best performance from your knives.
The small rail for knives with blade lengths up to 15cm and the large one for blade lengths over 15cm.
These guide rails are lined with plastic to minimise any scratching during their use. Any time you remove one from a knife it is good practice to rinse and clean thoroughly to remove any particles of dirt remaining in the guide rail..
