THE MATERIAL:
Zwilling J A Henkels special formular steel. The special formula steel with its optimum blend of carbon, chromium and other components delivers the best combination of hardness (approx 57 Rockwell), high elasticity and corrosion resistance. That results in lasting sharpness and cutting edge retention.
Blades are made from corrosion-resitant Zwilling J A Henckels special formula steel, FRIODUR, ice hardened.
Symmetric blades with ultra-sharp Honbazuke honing.
Four knife types with asymmetric, extremely pointed blades and Honbazuke honing.
Handles made from easy-care synthetic compound.
The traditional "D-handle" allows tireless working in all cutting techniques.

Avoid cutting hard substances such as shellfish or frozen food as they may damage the knife.
Miyabi knives are not dishwasher safe. Clean under running water , dry thoroughly and store in a dry place.
